Tasty White Spring Truffle (Borchii)
from: €50
Highlights
- Strong garlicky taste and aroma
- Combined with eggs, pasta, meat
- Ideal to make truffle-butter
Description
The White Spring Truffle is very similar in taste to the famous white autumn truffle (Tuber Magnatum) but it is somewhat less powerful in aroma and flavour.
However, it has a strong aroma of garlic and is not released until a few seconds after it is has been cut. The aroma of the truffle harmonises with the simplest of ingredients transforming any dish into a taste-enthralling feast. The taste is strong and garlicky.
The White Spring Truffle has a fairly smooth, pale skin, which ranges in color from ochre to reddish depending on the terrain in which it is harvested. Furthermore, the flesh is light tending to buff-colored up to brown, with a few large white veins.
The forests that give the best of this white truffle are with pine and kermes trees.
The average size of this truffle is small, like a hazelnut.
